Mandarin Salad
Ingredients:
½ C. sliced almonds
1 C. celery, chopped
3 Tbsp. sugar
2 whole green onions, chopped
½ head iceberg lettuce
1 (11 oz.) can mandarin oranges
½ head romance lettuce
Dressing:
½ tsp. salt
1 Tbsp. sugar
Dash of pepper
2 Tbsp. vinegar
¼ C. vegetable oil
Dash of Tabasco sauce
In a small pan over medium heat, cook almonds and sugar, stirring constantly, until almonds are coated and sugar dissolved. Watch carefully as they will burn easily. Cool and store in airtight container. Mix all dressing ingredients and chill. Mix lettuces, celery, and onions. Just before serving, add almonds and oranges. Toss with the dressing.
Overnight Salad
Ingredients:
Approximately 1 head iceberg lettuce, cut for salad
2 C. mayonnaise
1 bunch green onions, chopped
2 tsp. sugar
1 C. celery, chopped
½ C. Parmesan cheese, grated
1 can water chestnuts, chopped
¼ tsp. garlic salt
½ (16 oz.) bag frozen peas
6 or more slices cooked bacon, chopped
4 hard-boiled eggs, chopped
Preparation:
Arrange enough lettuce in a 9x13 inch casserole dish to come almost to the top. Layer remaining ingredients up until the mayonnaise in the order listed. Spread on mayonnaise evenly. Sprinkle evenly with sugar, cheese, and garlic, salt and top with bacon. Refrigerate overnight. Can be tossed or served layered.
