Marinated Black Bean Salad
Ingredients:
½ C. red wine vinegar
2 (14oz.) cans black beans
½ C. olive oil
1 pkg. frozen corn (white or yellow)
1 to 2 cloves garlic
1 red pepper, chopped
Salt and pepper to taste
1 green pepper, chopped
1 Tbsp. lemon juice
½ to 1 red onion, chopped
Preparation:
Mix all ingredients, except for beans, and set aside for 30 minutes. Add beans and refrigerate.
Cabbage Salad
Ingredients:
1 large cabbage
½ C. sesame seeds
4 green onions
1 pkg. slivered almonds
2 pkg. Top Ramen
1 stick margarine
Dressing:
¾ C. vinegar
4 tsp. soy sauce
1 ½ C. vegetable oil
4 tsp. soy sauce
1 ½ C. vegetable oil
1 ½ C. sugar
Shred cabbage and rinse. Chop onions. Melt margarine; add crushed Ramen noodles, almonds, and sesame seeds till light brown. Drain on towel. Mix cabbage, onions, and noodle mixture. Add dressing.
