Raw Foods Idea #20: Carrots & Raisins Salad

Easy, fast, and simple carrots salad with currants or other raisins.

Ingredients:

  • 1/2 cup currants grapes or other raisins
  • 3 cups carrots shredded fine
  • 1/2 chopped walnut
  • 1 teaspoon dill (or less)
  • 2 teaspoons olive oil or flax oil
  • 1/2 cup fresh parsley chopped

Preparation

  1. Mix carrots with currants grapes or raisins of your choice, walnuts, parsley, dill, add flax oil or olive oil until coated well.
  2. Serve with cut pieces of lettuce leaves or simply on one large leaf, make the presentation you prefer or depending of the guests, cut pieces are easier to eat for children or for a buffet outside.
