Macaroni Salad: A Great Summertime Treat

Everyone has their own recipe for this and mine is just one of the many ways you can make it.

If you are looking for a great addition to your summer BBQ meal try out this recipe for Macaroni Salad. This recipe is very popular with everyone in my family.

Ingredients

  • Small elbow macaroni - the amount you need varies depending on how much you are making
  • Mayonnaise
  • Sweet Pickle Relish
  • Dill Pickle Relish
  • Sweet and Dill Pickles
  • Hard boiled eggs 4 or 5
  • Sliced black olives
  • Mustard

Method

  1. Cook elbow macaroni according to package directions
  2. Drain and rinse with cold water
  3. Pour noodles into a large bowl and pour a small amount of sweet pickle juice over them
  4. Stir, cover, and refrigerate for a couple of hours
  5. Cooling the noodles keeps the mayo from getting greasy
  6. Once the noodles have cooled, mix mayonnaise to taste with them
  7. You don't want it to be too runny or too dry
  8. Stir in about a teaspoon of mustard
  9. Add in a couple of forkfuls of sweet and dill pickle relish and stir
  10. Add sliced olives, chopped eggs, and diced sweet and dill pickles and stir
  11. Salt and pepper to taste
  12. Keep refrigerated until you are ready to serve

Note: I am not a fan of dill pickles but the combination of sweet and dill pickles in this salad is what gives it the delicious flavor that everyone loves. Hope you enjoy!
