If you are looking for a great addition to your summer BBQ meal try out this recipe for Macaroni Salad. This recipe is very popular with everyone in my family.
Ingredients
- Small elbow macaroni - the amount you need varies depending on how much you are making
- Mayonnaise
- Sweet Pickle Relish
- Dill Pickle Relish
- Sweet and Dill Pickles
- Hard boiled eggs 4 or 5
- Sliced black olives
- Mustard
Method
- Cook elbow macaroni according to package directions
- Drain and rinse with cold water
- Pour noodles into a large bowl and pour a small amount of sweet pickle juice over them
- Stir, cover, and refrigerate for a couple of hours
- Cooling the noodles keeps the mayo from getting greasy
- Once the noodles have cooled, mix mayonnaise to taste with them
- You don't want it to be too runny or too dry
- Stir in about a teaspoon of mustard
- Add in a couple of forkfuls of sweet and dill pickle relish and stir
- Add sliced olives, chopped eggs, and diced sweet and dill pickles and stir
- Salt and pepper to taste
- Keep refrigerated until you are ready to serve
Note: I am not a fan of dill pickles but the combination of sweet and dill pickles in this salad is what gives it the delicious flavor that everyone loves. Hope you enjoy!
