Light & Zesty Rotini Salad with Vegetables |

This pasta salad has only a little fat, but a lot of taste. Add any raw veggies you like. It can only get better. |
Ingredients- 1 lb Rotini pasta cooked
- 1small Green Pepper chopped
- 1 small Red Pepper chopped
- 1small Red Onion thinly sliced
- ½ large Seedless cucumber chopped
- 12 Cherry Tomatoes cut in half
- ½ cup sliced raw white Mushrooms
- ½ - 3/4 cup crumbled Feta Cheese
- 1 ½ tbsp Extra Virgin Olive Oil
- 6 fresh Basil leaves slivered
- juice of one lime
- juice of one red Grapefruit /aprox 1/3 cup( orange juice will do)
- 1 ½ tbsp Grainy or Dijon mustard
- 1 tbsp liquid Honey
- 1/4 tsp Worcestershire sauce
- Salt and Pepper to taste
Method- Mix cooked , cooled pasta in a large bowl with vegetables
- In a separate bowl combine remaining ingredients except Feta together and mix well
- Pour mixture over the Rotini and Vegetables and toss until coated
- Add Salt and Pepper if needed
- Top with crumbled Feta
- Serve just a little cooler than room temperature
