Jicama Recipes

Jicama is not well known. I have two delicious recipes just in time for Cinco de Mayo.

Jicama is a wonderful root vegetable that actually is sweet in flavor. It is usually eaten raw in salads. I have two great recipes using jicama that I know you will love!

Jicama Slaw:

  • I large jicama, peeled and shredded
  • ½ Napa cabbage, shredded
  • 2 small carrots, shredded
  • ½ cup fresh lime juice
  • 2 Tablespoons rice vinegar
  • 2 tablespoons chili powder
  • 2 Tablespoons honey
  • ½ cup olive oil
  • Salt and pepper to taste
  • ½ cup chopped cilantro

Combine vegetables in a large bowl. In another bowl, mix lime juice, vinegar, chili powder, honey and oil and season with salt and pepper. Pour over vegetables and mix well. Fold in cilantro. Let marinate for 15 minutes and serve!

Jicama and Mango Salad:

  • 1 medium jicama, peeled and cut into long thin strips
  • 2 small cucumbers cut into long thin strips, similar to jicama
  • 3 mangoes, peeled and cut into wedges
  • ¼ cup chopped cilantro
  • 2 teaspoons chili powder
  • Juice of 2 limes
  • Salt

Combine all ingredients in a large bowl. When ready to serve, season with a little salt and garnish with cilantro springs.
