Jessica Rose's Awesome Vinegar and Jalapeno Dressing

This red wine vinegar, jalapeno, garlic, red onion and oil dressing is just what you need for a very light, fresh, zesty taste of warmer months ahead.

 

Ingredients

  • 3 TBS water
  • 1 part apple cider vinegar
  • 2 parts vegetable oil
  • 2 cloves of garlic crushed through a press
  • 1/2 jalapeno crushed through a press (leave a few seeds, but take out the ribs)
  • 1/2 small red onion crushed through a press
  • 1 tsp. kosher salt
  • 1/2 tsp. fresh ground pepper

Juice from one small to medium lime

Method

Combine all ingredients into a dressing container, and shake really well. Chill for about a half an hour before using.

Hint

Your results will vary if you do not use the garlic press. I have found that the press actually "juices" the jalapeno and onion. Also, the pieces are very small, and the flavor is just amazing. I love this dressing with a nice spinach salad, or even just a veggie marinade. You'll just love it!

for some reason i accidentally put red wine vinegar in some parts of this recipe. It's actually supposed to be apple cider vinegar.
