Ingredients:
- 2 Boneless, Skinless Chicken Breasts
- 1/4 cup Italian Dressing (Calorie Wise works just as well as the regular Italian)
- 8 Leafs of Romaine Lettuce
- 1 Medium Tomato
- 1/4 Red Onion
- 2 Carrots
- 1/2 Bell Pepper (whichever color you like)
- 6 Mushrooms
Method;
- Preheat barbecue to medium-high heat.
- Marinate the chicken breasts in the Italian dressing for approximately 10 minutes. Discard dressing.
- Grill the chicken 6 to 8 minutes on each side or until cooked through. Measure the chicken with a temperature probe so that it is at least 170º Fahrenheit. Do not undercook the chicken!
- Diagonally cut the chicken breasts into strips.
- Rip up the lettuce leaves and divide onto two plates.
- Slice the tomato, red onion, carrots, bell pepper and mushrooms. Divide onto the two plates.
- Top with the grilled chicken slices and an additional tablespoon of Italian Dressing, if desired.
Variations:
This recipe can be varied infinitely. Some of my favorite additions are: almond slices, sunflower seeds, grated cheese and fresh radishes.
