Grilled Chicken Salad

An easy grilled chicken salad. At my house my husband does the grilling while I get the salads ready. We're usually done about the same time so it works out perfectly.

Ingredients:

  • 2  Boneless, Skinless Chicken Breasts
  • 1/4 cup  Italian Dressing (Calorie Wise works just as well as the regular Italian)
  • 8  Leafs of Romaine Lettuce
  • 1  Medium Tomato
  • 1/4  Red Onion
  • 2  Carrots
  • 1/2  Bell Pepper (whichever color you like)
  • 6  Mushrooms

Method;

  1. Preheat barbecue to medium-high heat.
  2. Marinate the chicken breasts in the Italian dressing for approximately 10 minutes.  Discard dressing.
  3. Grill the chicken 6 to 8 minutes on each side or until cooked through.  Measure the chicken with a temperature probe so that it is at least 170º Fahrenheit.  Do not undercook the chicken!
  4. Diagonally cut the chicken breasts into strips.
  5. Rip up the lettuce leaves and divide onto two plates.
  6. Slice the tomato, red onion, carrots, bell pepper and mushrooms.  Divide onto the two plates.
  7. Top with the grilled chicken slices and an additional tablespoon of Italian Dressing, if desired.

Variations:

This recipe can be varied infinitely.  Some of my favorite additions are:  almond slices, sunflower seeds, grated cheese and fresh radishes.
