Garbanzo Pomegranate Salad

Delicious salad with garbanzo beans, pomegranate seeds and fresh cilantro.

I love to grow my own herbs and am always looking for healthy and vegetarian recipes to incorporate my harvest. I am lucky to live in Southern California and have several fruit trees on my property as well. I developed a unique dish using three things from my gardens; Pomegranate, lime, and cilantro. This is a Mid-Eastern style dish. Please try this dish; it is so easy and delicious. I really think you will enjoy it!! Serves about 6.

  • 1-teaspoon ground cumin, toasted
  • 1/3 c. lime juice
  • 1 tablespoon granulated sugar
  • 2 tablespoons chopped fresh cilantro
  • ¼ teaspoon cayenne pepper
  • 1-cup pomegranate seeds
  • 2 (15oz) cans of Garbanzo beans, rinsed and drained
  • 1-cup small-diced cucumber
  • ½ cup chopped red onion
  • Salt and pepper to taste

In a large bowl combine cumin, lime juice, sugar, cilantro and cayenne pepper.

Add Pomegranate seeds, garbanzo beans, cucumber and onion. Mix lightly. Season with salt and pepper to taste. Mix gently and serve.
