I have been looking for the perfect potato salad online but most of the ingredients used were not something that I expected. This potato salad is the final product from the recipes that I have read and from restaurants and friends recipes. Ham can be used instead of bacon. Apple tidbits can also be added for added color or presentation.
Ingredients:
- ½ kilo bacon
- 2 kilos potatoes
- 2 big cans pineapple tidbits (drained from juice)
- 1 cup mayonnaise
- 1 cup cabbage or lettuce
- 1 tsp black pepper
- Cheese (shredded)
Method:
- Peel and slice potatoes into bite-size cubes.
- Boil until tender. Drain the water and set aside potatoes to cool.
- Cut cabbage into bite size squares and set aside.
- Fry bacon until golden brown and crumble or slice thinly.
- Put potatoes in a salad bowl and add the pineapples, cabbage, cheese, bacon and black pepper.
- Add the mayonnaise and mix with all the ingredients.
- Top with shredded cheese and crumbled bacon.
- Cool in the refrigerator before serving.
