Easy Potato Salad Recipe

A quick, easy and delicious potato salad recipe.

I have been looking for the perfect potato salad online but most of the ingredients used were not something that I expected. This potato salad is the final product from the recipes that I have read and from restaurants and friends recipes. Ham can be used instead of bacon.  Apple tidbits can also be added for added color or presentation.

Ingredients:

  • ½ kilo bacon
  • 2 kilos potatoes
  • 2 big cans pineapple tidbits (drained from juice)
  • 1 cup mayonnaise
  • 1 cup cabbage or lettuce
  • 1 tsp black pepper
  • Cheese (shredded)

Method:

  1. Peel and slice potatoes into bite-size cubes.
  2. Boil until tender. Drain the water and set aside potatoes to cool.
  3. Cut cabbage into bite size squares and set aside.
  4. Fry bacon until golden brown and crumble or slice thinly.
  5. Put potatoes in a salad bowl and add the pineapples, cabbage, cheese, bacon and black pepper.
  6. Add the mayonnaise and mix with all the ingredients.
  7. Top with shredded cheese and crumbled bacon.
  8. Cool in the refrigerator before serving.
