Creamy Vegetable Salad Recipe

This is a fat-free, light and healthy recipe. Creamy vegetable salad is a perfect dish to make on a hot summer day.

Ingredients

  • 2 ½ cups broccoli florets
  • 2 ½ cups cauliflower florets
  • 1 cup red onion, sliced
  • 1 cup fat-free mayonnaise
  • 1/3 cup fat-free Parmesan cheese
  • ¼ cup sugar
  • Pepper to taste

Method:

  1. Combine broccoli, cauliflower, and onion in a large bowl; toss to mix vegetables.
  2. In small bowl, combine mayonnaise, Parmesan cheese, sugar, and pepper; blend until smooth.
  3. Pour dressing over vegetables, cover, and refrigerate several hours or overnight.
