Cherry Tomato, Basil and Feta Salad

Tired of the usual salads?  For a refreshing change of pace, complement your meal with a Cherry Tomato, Basil and Feta Salad.  This recipe provides an interesting and delicious alternative to the ordinary dinner variety.  And as an added bonus, it's very easy to make!

Ingredients:

  • 1 lb. Cherry or Grape Tomatoes
  • 2/3 Cup Feta Cheese
  • 10-12 Basil Leaves (cut in strips)
  • Olive Oil
  • Seasoned Rice Vinegar
  • Optional: 1 Small Red Onion (sliced thin)

Method:

Put the tomatoes, feta, basil and onion (if desired) into a bowl.  Toss together with olive oil to lightly coat the salad.  Add the seasoned rice vinegar to taste. 

That's it!  Now the trick will be to keep yourself from eating it straight from the bowl!
