Cabbage Salad

Since I do like pineapple, my wife came out with a recipe, which became a fave of my family.

Its been a month now since my wife Rose asked if me if she can share some of her favorite recipes here at Triond. Its only now that I do have some spare time to grant her request. She is a real good cook so, allow me to share some of her stuffs. Hope you like them.

Ingredients

  • ¼ kilo medium shrimps
  • ½ kilo cabbage, shredded
  • 1 can (439 g.) pineapple chunks (reserve syrup)
  • ¾ cup raisins
  • 2 Tbsp. sweet pickle relish
  • Dressing:
  • ½ cup evaporated milk
  • ½ cup water
  • 1 egg yolk
  • 1 Tbsp. corn starch, dissolved in 1 Tbsp. water
  • 1/3 tsp. iodized salt
  • 1/8 tsp pepper

Method

1. Simmer shrimps in pineapple syrup and ¼ cup water until cooked. Peel and slice. Combine with the remaining ingredients except for dressing. Chill.

2. Combine ingredients for dressing. Stir until well blended. Cook over medium heat with constant stirring for 5 minutes. Cool. Combine with cabbage-pineapple mixture. Toss to blend. Chill until ready to serve.

Mmmm... Might have to try that one out , my partner is a great cook, I just had him read your wife's recipy. He wants to try and make it. He loves to cook. Thankyou for that. Ps Thankyou so much for your wonderful comments. I really do appreciate them.
