pickles

Great pickles recipe.

Ingredients:

  • 2 teacups of any one of the following, salted and dried in the sun beforehand.
  • Young green mango
  • Limes
  • Rnmanis
  • Blimbing

Ingredients to be ground, using vinger for softening spices during grinding

  • 20 dried chillies (1/2 seeded )
  • 2 1/2 tablespoons jintan putih together
  • 1 inch piece turmeric
  • 1 dessert spoon mustard seed - separately and not too fine
  • 4 slices fresh ginger - when ground to measure 1 teaspoon
  • 1 teaspoon alba - whole

Ingredients to be coarsely shredded

  • 12 -16 cloves garlic
  • 12 slices ginger
  • 1 1/2 teacups vinegar (more if necessary)
  • 2 tablespoons sugar (to taste)
  • Salt - to taste
  • 3/4 cup good vegetable oil

Method

Put oil in pan.Fry ground ginger and shredded,ginger and garlic. Remove ginger and garlic from oil after about 2 minutes.Fry all ground spices and alba in the same oil,stirring well,till well cooked.Add vinegar,sugar and a little salt. Allow to simmer for a few minutes.Add the fried ginger and garlic and the preserved mango (or other fruit)which has been scalded with boiling water and drained.Stir,adding more sugar and salt if necessary.When boiling,transfer pickle to porcelain bowl and allow to cool before putting away in bottle.
