Ingredients
- 3 lbs shredded Zucchini (drained of it`s juices)
- 1 medium carrot shredded
- 3 tbsp very finely minced green onion
- 2 tbsp very finely minced red pepper
- ½ cup Parmesan or Romano Cheese (optional)
- 1 tbsp finely chopped fresh Parsley
- 1 tbsp finely chopped fresh Basil
- 1 cup soft bread crumbs (fresh)
- enough egg whites to make ½ cup
- Salt and Pepper to taste
- Dry bread crumbs
Method
- Preheat oven to 350*
- Spray a cookie sheet with non stick spray or coat lightly with vegetable oil
- Combine all ingredients except the dried bread crumbs and form into patties
- Coat patties in the dry bread crumbs and place on cookie sheet
- Bake 35-40 min. or until golden brown
*These are nice served warm with a salad for lunch and mini patties are a nice and inexpensive hors d'oeuvre.
