Veggie Burger Spinach Salad

A recipe for my very favorite vegetarian meal.

I came up with this meal in the cafeteria at school when I ate vegetarian for a month to see if it would aide in my health. (eating vegetarian did help, and I've only added chicken for protein to this day.) This salad is meant to mimic a chicken salad, and I think it really hits the spot.

Ingredients:

  • Baby spinach
  • Veggie Burger
  • Feta Cheese
  • French Dressing

Method:

Cook your veggie burger in your desired way (grill, bake, broil, microwave, etc). The salad is best when the veggie burger is hot (or warm). Arrange your baby spinach on a plate and then rip the veggie burger into pieces and spread over the spinach. Add Feta Cheese (for flavor and protein). For sauce, I enjoy French dressing, but anything sweet will do the trick (French dressing, raspberry vinaigrette, mango chutney, etc.)

This recipe is simple, but the meal is quite delicious and filling. Enjoy!

Im a vegetarian and in this country, there are few vegetarian options (except salads). This looks promising. Thanx for sharing.
