Spicy Eggplant

Try this spicy eggplant treat.

Ingredients

  • 1 no. Eggplant(large)
  • 2 nos. Onion
  • ½ tbsp. Ginger(paste)
  • ½ tbsp. Garlic(paste)
  • 1 tsp. tamarind(juice)
  • 1 tsp. Spice mix for Chaat
  • Coriander leaves for garnishing
  • 2 nos. Green Chilies
  • 2 tbsps. Vegetable Oil

Method

  1. Keep the eggplant on direct flame for roastin or you can also roast it in a pre-heated oven.
  2. Meanwhile, dice the onions and green chillies into small pieces.
  3. Heat little oil in a pan and add the ginger garlic paste, heat it for a minute then add the cut onions and saute for two minutes.
  4. After that remove the skin of the roasted eggplant and mash it properly.
  5. Add the mashed eggplant to the onions and stir it properly.
  6. Now add the tamarind juice, and salt and the chat masala.
  7. The dish is ready now.
  8. Add few coriander leaves for garnishing and taste.
