Orange Beetroot |

This is a dish that is prepared in Cyprus and offered as part of the Mezes,a selection of dishes,there can be up to 20-30 are served to the welcome visitor to the table. Beetroot is served in a variety of ways, all coming from different family recipes, this dish is a sweet but tangy dish and compliments the Greek salad. |
Ingredients- 450g of plain cooked beetroot
- 150ml malt vinegar
- 1 tablespoon corn flour
- 225g dark brown sugar
- Rind and juice of 3 sweet oranges
Method- Cut beetroot into long strips (looks good) and put into an oven proof dish
- Heat vinegar and sugar in a pan over a gentle heat, simmer for 5 minutes
- Mix a little orange juice to the cornflour and make a paste
- Pour the rest of the juice into the simmering pan and continue simmering for another 5minutes
- Stir in the cornflour paste stirring, thickening the sauce
- Pour the sauce over the beetroot and warm in a preheated oven, 150c for 5 - 10 minutes
- This dish improves if left in fridge overnight and then heat and serve
- Garlic and cracked coriander seeds also compliment this dish
