Nasi Goreng

An easy recipe for a vegetarian meal.

  • One red onion, roughly chopped
  • Rice, one cup per person
  • Eggs, one per person
  • Spring onions, six
  • Chilli flakes
  • Soy sauce
  • Garlic, one clove, crushed
  • Olive oil, one table spoon

This simple vegetarian recipe makes a fun meal even the fussiest eaters will enjoy. Begin by putting the rice on to cook in a pan of boiling water. As this is cooking, heat up a table spoon of olive oil in a pan, add the onion, spring onions and finally the garlic, being careful not to have the heat too high. When the rice is cooked, drain it and add soy sauce, one table spoon per cup of rice or more depending on your preferred strength of flavour. Sprinkle the chilli flakes on top, using your own judgement on how spicy you wish the dish to be, usually about two pinches per cup of rice is sufficient. Tip the oil and fried ingredients onto the rice, stirring through. Serve hot with a fried egg on top.
