Melt-in-your-mouth Cheese Souffle

Cheese soufflé is a light and satisfying lunch or dinner dish.

Watch as this soufflé puffs up magically while it cooks.

Soufflé Cream Sauce

  • 3 tbsp butter
  • 4 tbsp flour
  • 1 cup milk
  • ½ tsp salt
  • 1/8 tsp dry mustard
  • ¾ cup grated cheddar cheese

Melt butter and whisk in flour. Add milk, stirring until thickened. Add seasonings. Add the cheese and stir until melted. Remove pan from heat and set aside.

Additional Soufflé Ingredients

  • 3 egg yolks
  • 3 egg whites (whip egg whites)

Add to pan:

3 unbeaten egg yolks, stirring until blended into sauce. Fold in the whipped egg whites. Pour mixture into a buttered dish. Bake in a 350-degree oven, 40 minutes, or until mixture doesn't stick to knife tip when inserted.

Souffle puffs magically and should be eaten immediately.

  • For a “top hat” effect, run a knife around the outside edge, inward about an inch, before popping soufflé into the oven

Cheese soufflé is a light dish. Visually appealing and pleasing to the palate-sure to be a crowd pleaser.
