How to Slow Roast Tomatoes

Slow roasted tomatoes can add a rich and intense flavor to your pasta dishes and other recipes. Here's how to roast tomatoes in your own oven.

If you haven't discovered the delicious taste and versatility of roasted tomatoes, you're in for a real treat. You can use these tasty delicacies in recipes for sauces, soups, stews, and even salsas. Plus, they have a long shelf life when refrigerated which gives you plenty of time to use them in all of your favorite recipes. The best news is you can learn how to make slow roasted tomatoes right in your own oven. Here's how to roast tomatoes:

Prepare your tomatoes.

The best slow roasted tomatoes tend to be of the Roma variety since they're quite meaty. Start by cutting around 15-20 tomatoes in half and set them aside. Your tomatoes should be similar in size so they cook at the same rate.

Prepare your baking sheet.

Spray a metal baking sheet with a thin layer of olive or canola oil. Arrange your cut tomatoes face down on the metal sheet. You can spray the tomatoes lightly with olive oil and sprinkle them with your choice of herbs and spices, including salt and pepper.

Prepare your oven.

Preheat your oven to 250 degrees Farenheit and place the baking sheet with your freshly prepared tomatoes in the oven.

Roast your tomatoes.

It's time to let the heat do its magic. You'll want to slow roast them for a total of around eleven hours, although you should check on them periodically to make sure they're not overcooking. After several hours, the tomato skins will start to wrinkle. Your tomatoes will appear shriveled after about six hours. You'll want the tomatoes to turn a rich, golden brown and shrink to around half their size before taking them out of the oven. Enjoy the sweet smells that fill your kitchen as the tomatoes roast. When the slow roasting process is complete, remove your roasted tomatoes from the oven and allow them to cool a bit before gently peeling off the skins.

If you won't be using your slow roasted tomatoes immediately, you can freeze them for future use. If not, they're ready to use in your favorite tomato based recipes.
