Green Chili and Tortilla Casserole

This pretty layered casserole has a slight tang from the buttermilk.

This pretty layered casserole has a slight tang from the buttermilk. Although it sounds rich and full of fat, buttermilk weighs in at only 100 calories and 2 grams of fat per cup.

 

Ingredients

 

  • Vegetable oil spray
  • 8 6-inch corn tortillas
  • 4 ounce can chopped green chili peppers, drained
  • 1 cup shredded cheddar cheese
  • 1 medium red bell pepper, chopped
  • 4 green onions, sliced
  • 2 eggs
  • 1 cup buttermilk
  • Preheat oven to 325 degrees.

Method

Spray a 9 inch square glass baking dish with vegetable spray.

Tear tortillas into bite size pieces. Arrange half of the tortillas in baking dish. Top with half the green chilies, half the cheese, half the bell pepper, and half the green onion. Repeat layering. Set aside.

Stir together eggs and buttermilk. Gently pour over tortilla mixture. Bake uncovered for 30 to 3 minutes or until a knife inserted near the center comes out clean.

Serve warm.

Serves 4 one cup servings.
