- Grand Crimini Mushroom, 4” cap 4 no
- Corn Oil 2 tbsp
- Garlic, chopped 2 Cloves
- Peppercorn, crushed pinch
- Salt pinch
- All Purpose Flour 2 Tablespoon
Clean the mushrooms but avoid washing with water, removed the woody core using sharp knife, marinate
In the corn oil and chopped garlic, allow the oil to absorb into the mushrooms. Season the flour with crushed blackpepper and salt. Mix this flour with mushroom and put aside or you may keep it in refrigerator.
Batter Recipe
- Egg White 2 no
- All Purpose Flour 3 Tablespoon
- Tapioca Starch 2 Tablespoon
- Baking Powder 1 Teaspoon
- Salt pinch
- Beer ¼ Cup
- Corn Oil ¼ Cup
Whisk the egg white until soft peak, my suggestion is to use the balloon whisk and to apply some heat
it will speed up the process. Once it done, whisk in the all purpose flour, tapioca starch, baking powder and salt. Add into the mixture the beer and mix well. Lastly bind in well with oil. You may substitute the beer either with milk or water if you want. Tapioca starch can be substitute with cornstarch. The batter itself can be use with fish, squid, prawns and other vegetables.
Paw Paw Salad
- Papaya, ripe, medium size ¼ no
- Onion, finely chopped ½ no
- Apple Cider Vinegar 3 Tablespoon
- Sugar 1 Teaspoon
- Capsicum, seedless, chopped ½ no
Peel and cut the papaya into dice about a bite size. Place nicely on top of the plate. In separate bowl, mix well the chopped onion with vinegar, sugar and chopped red chilly. This is the dressing for the salads. You may place some alfalfa sprout or any green lettuce on it if you like. To fry the mushroom, dip the mushroom in the batter and fry in hot deep fryer until golden brown and placed nicely on plate next to papaya salad.
Grand Crimini actually known as Portobello Mushroom or also called as “brown cap”, famous as vegetarian meat, rich with fiber and minerals available fresh in any mart in country. Paw paw is the other name for papaya, an exotic fruit from tropical area. Can be eaten raw when it ripe. Young papaya normally has to be cooked first normally as an accompaniment for meat dish such as Chicken Curry, used widely as a tenderizer agent for cooking fowl.
