Garlic Flatbread with Roasted Garlic and Sundried Tomato Spinach Toss

The Godfather would be proud of this recipe. This recipe was fashioned after Pizzeria Corleone, my award winning restaurant.

This a special Sicilian recipe that I used in my restaurant. It was a big seller and I'm sure even the most discriminating of palates will love it.

You will need my recipe for NY Pizza Dough to complete this flatbread recipe

Flatbread

Ingredients

  • 1/2 recipe pizza dough
  • 1/4 cup extra virgin olive oil
  • 1/2 tbsp kosher salt
  • 1 tbsp garlic
  • 1 tbsp sage
  • 1 tbsp oregano
  • 1 tbsp thyme
  • 2 tbsp parmesan cheese

Baking Method (Use a stone for the best results)

  1. Take dough and put on a floured service.
  2. Stretch the dough until it frames your stone or pizza screen.
  3. Brush with olive oil.
  4. Sprinkle kosher salt, sage, thyme, oregano, parmesan cheese, and fresh garlic.
  5. Bake in pizza oven at 575 Degrees or conventional oven at 450 Degrees for 6-8 minutes or until golden brown and crispy.

Note: Please watch your oven closely. This flatbread can be burned easily if your not watching.

Garlic and Sundried Tomato Spinach Chutney

Ingredients

  • 10 cloves garlic
  • 1 Bag sundried tomato
  • 1/2 Bag Fresh spinach
  • Extra Virgin Olive Oil 3/4 cup plus 1 Tbsp
  • 1/2 Tbsp Kosher salt
  • 1/2 Tbsp sugar

Method

  1. Boil Garlic in olive oil until tender and golden brown. Put to the side when done.
  2. Saute Sundried Tomato and Spinach in 1 Tbsp oil until slightly wilted.
  3. Place all ingredients in food processor along with salt and sugar.
  4. Pulse until ingredients are combined.
  5. Place to the side for dipping.

There are some steps to this but, in the end it's both pretty healthy the flavor is incredible.
