Egg Fried Rice

How to cook that famous rice dish.

Serves 2 - Ingredients:

  • 3-4 handfuls of rice. It depends how hungry you are really. It doesn’t matter what rice you use.
  • 2 eggs. Beaten. Don’t go too mad beating them together. It doesn’t really matter that much.
  • A good splash of oil. Up to you which one you use. Olive oil or normal.
    Pinch of salt and pepper.

Optional:

  • Finely chopped quarter of a red pepper.
  • Finely chopped chilli.
  • Finely chopped onion.


These add flavours and colour to your finished dish.

Tip:

Wash your rice before you cook it. This cleans the starch off and stops it from sticking.

Method:

  1. Cook your rice 1st. Bring a saucepan of water to the boil and then let the water simmer.
  2. Add your rice and a pinch of salt and pepper.
  3. Never over cook your rice. If your rice splits that’s it. Throw it away and start again. You will end up with a plate of slop. Keep testing your rice. If you under cook it slightly, don’t worry this is fine at this stage. Your rice should take around 6-7 minutes to cook without over cooking it.
  4. Drain your rice ready for the next step.
  5. Get your frying pan or wok out, and splash in your oil. Bring to a medium heat.
  6. Now add your eggs. Let it slightly harden then stab the hell out of it with your utensil. Break it up into little bits.
  7. Now add your optional vegetables. Cook for around 2-3 minutes. Keep moving it around so you don’t burn the egg.
  8. Now add your rice. Work your wok or frying pan. Turn the heat up slightly and wait for the rice to start popping. Once it does this its ready to go. Should take about 3-4 minutes to get your rice golden. You might want to add a little salt for more favour.


Great with curries and Chinese food. Your mates will be really impressed.
