Another favorite recipe of my wife.
Ingredients:
- 1 medium (400 g.) turnip, cut into 1” chunks
- 2 medium (300 g.) carrots, boiled and cut into ½ cubes
- 1 stalk celery, sliced thinly
- 1 can (439 g.) Pineapple chunks, drained (reserve syrup)
Dressing:
- 100 grams Quickmelt cheese, coarsely grated
- ¼ cup evaporated milk
- ¼ cup pineapple syrup
Preparation:
1. Combine vegetable with pineapple chunks. Chill.
2. Melt cheese over low flame. Gradually add evaporated milk and 3 Tbsp. water. Stir continuously until mixture is well blended. Add pineapple syrup and ¼ tsp. pepper, Simmer for 3 minutes, then cool completely.
3. Pour dressing over vegetable mixture. Toss until well mixed. Chill until ready to serve.
Makes 10 servings.
