Ingredients
- 1 small/medium Onion
- 1½ cups grated Cheese
- 3 cups soft breadcrumbs
- ½ teaspoon Salt
- ¼ teaspoon each Sage & Thyme
- Black Pepper to taste
- 2 Eggs
- ¼-½ cup dry breadcrumbs
Method
- Chop onion finely or use processor to do this.
- Mix onion together with grated cheese, seasonings and breadcrumbs.
- Add one of the eggs, then separate the other, adding the yolk to the crumb mixture and reserving the white.
- Stir until well combined.
- Using wet hands, shape mixture into six even sized sausages if the mixture is too wet add dry breadcrumbs and mix again.
- When that is done, roll each sausage in the egg white first, then in the dry breadcrumbs.
- Let stand for five minutes then cook in a pan until they are golden brown about 6-8 minutes.
Serve with salad and fries or mashed potatoes and peas.
