Champagne Antipasto

This a light and healthy appetizer or entree for the summer months.

You can typically made this recipe with just vegetables however, if you are a meat lover, add some Capicola, Salami, Mortadella, chicken, or turkey.

It's very simple and the measurements can be played with as you will soon see.

Ingredients

  • 1 cup Artichoke quarters
  • 1 cup sliced Roma tomato
  • 1 cup Caramelized Red Onion
  • 1 cup cubed Feta
  • ½ cup sliced Red Pepper
  • ½ cup sliced Yellow Pepper
  • ¾ cup of Kalamata Olives, Manzanella Olives, or Black Olives

Dressing

  • 1 ½ cup of Champagne Vinegar
  • 1 cup of Amber Honey

Method

  1. Toss all of your vegetables together and set aside in the frig.
  2. Mix your dressing with a whisk until smooth. Add honey in a steady stream while whisking dressing.
  3. Combine the two.

It's just that simple.

If you would like to add other your meats at this point, please do so. Make sure all of your cuts are uniform.
