Packed with iron, phosphorus and fiber, the ancient Incan grain quinoa makes a great choice for healthy eating. Prepared Southwest-style and served over a bed of mixed greens, it's also wonderfully delicious.
(Makes 4 servings)
Ingredients:

1 cup quinoa

2 cups water
-
2 cups mixed organic greens

2 large Roma tomatoes, diced

1 15-ounce can organic corn
-
1 15-ounce can organic black beans
-
1 ripe avocado, diced
-
1/4 cup diced yellow onions

1 tablespoon finely chopped jalapeƱo peppers

1 clove garlic, minced

Salt and pepper, to taste
Method:
- Rinse quinoa several times to remove the soapy, bitter tasting saponins.
- Heat quinoa, water, garlic and onions in a pot until water begins boiling; keep over medium heat until water is absorbed and quinoa becomes fluffy.
- Add tomatoes, corn, black beans and jalapeƱos.
- Season to taste.
- Wash mixed greens and divide equally onto four plates.
- Top greens with quinoa mixture.
- Garnish quinoa with diced avocados.
- Serve and enjoy!
