Awesome Southwestern-style Quinoa

A delicious, meatless and nutritious meal: southwestern-style quinoa over a bed of mixed greens.

Packed with iron, phosphorus and fiber, the ancient Incan grain quinoa makes a great choice for healthy eating. Prepared Southwest-style and served over a bed of mixed greens, it's also wonderfully delicious.

(Makes 4 servings)

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 2 cups mixed organic greens
  • 2 large Roma tomatoes, diced
  • 1 15-ounce can organic corn
  • 1 15-ounce can organic black beans
  • 1 ripe avocado, diced
  • 1/4 cup diced yellow onions
  • 1 tablespoon finely chopped jalapeƱo peppers
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Method:

  1. Rinse quinoa several times to remove the soapy, bitter tasting saponins.
  2. Heat quinoa, water, garlic and onions in a pot until water begins boiling; keep over medium heat until water is absorbed and quinoa becomes fluffy.
  3. Add tomatoes, corn, black beans and jalapeƱos.
  4. Season to taste.
  5. Wash mixed greens and divide equally onto four plates.
  6. Top greens with quinoa mixture.
  7. Garnish quinoa with diced avocados.
  8. Serve and enjoy!
