Concise African Cooking Notes - Recipe 4: Ugali and Coconut Beans (typical Tanzanian Recipe)

Recipe of how to cook the famous Ugali and beans which is liked for its capacity to create energy especially to heavy duty workers like farmers and cargo lifters.

Ingredients:

  1. Maize Flower ½ kg
  2. Water 850 ml for Ugali
  3. Dried beans ¼ kg
  4. Coconut 1 medium size
  5. Onions 2
  6. Tomatoes 2
  7. Salt 1 teaspoon level

Method:

  1. For beans: Boil beans for 30 min or until they are tender;
  2. Grate coconut and prepare its juice using 250ml of warm water; begin with first juice using 125ml and then second juice using 125ml of water and store separately
  3. Peel and chop tomatoes and onions
  4. Start to boil the second coconut juice adding onions, tomatoes and salt. Let it boil until tender for 5-10 min.
  5. Then add boiled beans and mix while simmering for 2 minutes;
  6. Then add the first coconut juice and reduce heat, leave to boil for 5 minute then its ready
  7. For Ugali: Boil water 850ml, after boiling, then start adding maize flour while mingling fast. Turn the flower and mix constantly until soft dough appear after 5- 10 min. Put the dough in the hot pot and serve immediately with coconut beans.
