For those on a tight budget, just want something quick and easy to make, or if you just like bean burritos and want to be able to make a really good one. These are also great in college, not only does it make at least 12 burritos for like at the very most $8 dollars, they can be made in a microwave if necessary. That part comes in handy if you are ever stuck in a dorm room with access to only a microwave for your meal preparation needs, as I was for a while. This also makes them easy to make at three in the morning while still drunk, by the way.
Ingredients
- 1 can refried beans (I prefer Rosarita, but almost any will work)
- ½ can (or to taste it can get a bit spicy) El Pato Mexican style tomato sauce (If you cannot find El Pato Just about any salsa will work)
- A bunch of cheese: at least half a small bag of the already grated Colby/Jack mixed blends, but you can almost never put too much cheese
- A small spoonful of butter (if handy, not a necessity)
- A dozen tortillas or however many you have on hand or want to make
Method
- In a medium sized saucepan heat a little bit of butter with the cheese and El Pato or salsa until the cheese is pretty well melted.
- Next, add in your can of beans and heat on medium low setting until well mixed and hot.
- Be careful and stir often because the bottom will heat up fast and can burn while the top is still cold if you do not.
- While those are cooking heat up your tortillas, the best way is on the stove.
- If you have open flame burners they come out nice just flipped from side to side straight on the burner.
- With an electric stove top using a flat pan to heat them up usually works better.
- While this is the preferred method, they too can be warmed up in the microwave if necessary.
- Once both are hot spoon some beans along one side of the tortilla, fold up a small flap of the tortilla on the bottom (to hold the beans in) and roll.
Sour cream and more salsa are always good with them and if you want to get fancy with them roll them up and fry them in a little bit of cooking oil, until both sides are a nice golden brown then smother them with some good red enchilada sauce and enjoy.
