Jessica Rose's Shrimp Burrito Surprise

Luscious mix of Shrimp, asparagus, and a wonderful salsa with roma tomatoes and cilantro. Refreshing textures you will love! Very easy to make!

A few years ago I was doing a lot of yo-yo dieting. I was over 370 and my weight was definitely taking it's toll on my body. One of the diet plans that I tried was Richard Simmons Deal-A-Meal.

This really worked well for a while. I got so involved with it that I actually entered a contest for his next recipe book, and I won! Now, mind you, the only thing I really did win was publication (with my picture) and a dedicated signature from Richard Simmons himself. He really is a swell guy.

Needless to say, I didn't last too long on that diet. I ended up having weightloss surgery about six years ago. I will also be doing some recipes on here that are high in nutrition to help those that are in the same boat. Anyway, here is my original prize winning recipe. Richard changed one of the ingredients in the book. (hint, it's spinach.)

Ingredients:

  • flour tortillas (large size)
  • chilled, cooked jumbo shrimp
  • Asparagus spears or fresh baby spinach (boil asparagus, raw spinach)
  • Parmesan cheese
  • salsa

Salsa Ingredients:

  • 2 large Roma tomatoes, chopped
  • 3 or 4 minced green onions with white and green parts
  • a good hand full of minced cilantro
  • 2 healthy squeezes of lemon juice
  • 2 healthy squeezes of lime juice
  • 2 hard shakes garlic salt

Method:

  1. Salsa topping is easy to make.
  2. Add Toms, green onion, cilantro, lemon and lime juice, and garlic salt into a bowl and blend.
  3. Refrigerate.
  4. Make sure shrimp are nice and chilled, deveined, and shelled.
  5. Steam Asparagus until bright green, run under cold water (The best way to cook asparagus is to fill a large skillet with water, break off woody parts of asparagus, it'll just "snap" off, boil water and lay asparagus in the pan whole. It cooks much more evenly this way.)
  6. Tortillas should be room temperature
  7. Take room temp tortilla and place on a plate.
  8. Place 3 chilled asparagus spears or small handful of chilled spinach on tortilla.
  9. Place 3 or 4 chilled jumbo shrimp on tortilla.
  10. Add chilled salsa topping.
  11. Sprinkle with parmesan cheese.

So, there you have it! Nice and refreshing, low calorie, an all around great meal!
