You can put this delicious crock-pot supper in the pot before you leave for work and it will be ready for the family meal when you get home. Serve with a salad and rolls.
Ingredients
- 1 medium onion, finely chopped 1 green pepper, chopped
- 2 ribs celery, thinly sliced 8 oz. turkey kielbasa, sliced
- 1 can (28oz.) whole tomatoes 1 cup uncooked converted rice
- 2 tsp. salt free Cajun Creole seasoning 12 oz. peeled large shrimp
- Garnish; chopped parsley and hot pepper sauce
Method
- Layer onion, pepper, celery, kielbasa in a 31/2 qt.slow cooker.
- Mix tomatoes and their juices, rice, seasoning in a medium bowl, breaking up tomatoes with a spoon. Pour in slow cooker. Cover and cook on low 4 to 5 hours unless rice is tender. Stir in shrimp, cover and cook 20 minutes until cooked through. Sprinkle with parsley and hot sauce.
