Coconut Fried Prawns

A tasty variation on how to cook prawns.

Ingredients:

  • 75g/3oz Freshly Grated Coconut
  • 50g/2oz Fresh White Breadcrumbs
  • 3 Eggs, beaten
  • 120ml/4fl.oz. Milk
  • 1 teasp Cayenne pepper
  • 32 large Raw Prawns (shrimp), peeled and deveined
  • Vegetable oil for shallow frying

Preparation:

  1. Place coconut and bread crumbs in a shall dish and mix to blend well. Set aside.
  2. In another shallow dish. beat together the eggs, milk and cayenne pepper.
  3. Dip the prawns into the egg mixture then roll in the breadcrumb mixture to coat evenly.
  4. Heat the oil until hot then fry the coated prawns until golden brown on all sides. Drain on kitchen paper and serve hot with a dipping sauce.

Serves 4.
