Coconut Fried Prawns |

A tasty variation on how to cook prawns. |
Ingredients:- 75g/3oz Freshly Grated Coconut
- 50g/2oz Fresh White Breadcrumbs
- 3 Eggs, beaten
- 120ml/4fl.oz. Milk
- 1 teasp Cayenne pepper
- 32 large Raw Prawns (shrimp), peeled and deveined
- Vegetable oil for shallow frying
Preparation:- Place coconut and bread crumbs in a shall dish and mix to blend well. Set aside.
- In another shallow dish. beat together the eggs, milk and cayenne pepper.
- Dip the prawns into the egg mixture then roll in the breadcrumb mixture to coat evenly.
- Heat the oil until hot then fry the coated prawns until golden brown on all sides. Drain on kitchen paper and serve hot with a dipping sauce.
Serves 4. |
