Chilli Prawn Croquettes |

Freeze these after the rolling in the breadcrumbs and you always have a snack in hand. |
Ingredients:- 1 cup prawns, peeled, deveined and minced
- ½ cup celery, chopped
- 1 egg, beaten
- 3 table spoon butter
- 3 table spoon flour
- ¾ cup milk
- 1 teaspoon chilli powder
- ¾ cup breadcrumbs
- Flour
- Salt and pepper to taste
- Oil for deep-frying.
Preparation:- Melt butter.
- Add the flour and stir till smooth.
- Add milk and bring to the boil gradually.
- Stir to make sure no lumps form.
- Cook for about 3 minutes.
- Add the prawns, celery and seasoning.
- Chill in the refrigerator till firm.
- Divide the mixture into 12 pieces according to preference and shape into croquettes.
- Coat each piece with flour.
- Then dip in the egg followed by the breadcrumbs.
- Fry croquettes in hot oil till golden brown.
- Serve hot.
