English Muffin Pizzas
Ingredients
- Pkg English Muffins
- Healthy Choice Garlic Lovers Sauce
- Shredded provolone and mozzarella cheese & parmesan
- Hungarian Salami - chopped and quartered
- Chopped artichoke hearts
- Chopped black olives
- Sliced grape tomatoes
- Diced red onion
Method
- Cut English muffins in half.
- Spread sauce on top.
- Top with salami pieces.
- Cover with cheese.
- Top with artichoke, olives, and tomato.
- Sprinkle with parmesan.
- Place on cookie sheet and bake at 350 until cheese melts and sides of muffin crisp.
Dessert: Carrot Cake
Ingredients
- 2 cups flour
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 2 cups sugar
- 1 tbsp brown sugar
- 1 1/2 cups oil
- 4 eggs
- 2 cups grated carrot
- 1/2 tsp vanilla
- 1 cup margarine
- 8 ounces softened cream cheese
- 1 lb confectioners sugar
- 1 tsp vanilla
- Splash of milk
- Dash of lemon juice
Method
- Preheat oven to 350.
- Next, mix in flour, baking powder, baking soda, salt, and cinnamon.
- Add sugar, oil, eggs, splash of milk, and lemon juice and mix together and stir together.
- Add carrots and mix.
- Pour into pan, and bake for 45 minutes until done.
- Allow to cool.
- Stir in softened cream cheese, confectioner's sugar, and vanilla.
- Beat until fluffy and spread on cooled cake.
