Vegetarian Lasagna

A delicious lasagna that will be a hit at the table by meat lovers and vegetarians alike.

Ingredients:

  • Lasagna pasta or some homemade pasta sheets
  • Pasta sauce
  • 1 package fresh mushrooms, sliced
  • 1/2 broccoli head, cut
  • 1 onion
  • dab of canola or olive oil
  • Cheese of your choice

Method

  1. Boil the pasta sheets according to directions. Boil the homemade pasta sheets for about 5 mins if you made them.
  2. While they are boiling, in a little bit of olive oil, sauté the mushrooms, broccoli, onion until slightly soft
  3. Grease the pan with olive oil and then layer the pan in this order: pasta, sauce, vegetable mixture, pasta and repeat. Finish by sprinkling a fair amount of cheese over the top. Bake on 300-350 degrees until it is bubbling and golden on the top.

Homemade pasta:

Ingredients

  • 1 c plain flour
  • 2 eggs
  • Semolina

Method

If you want to make your own sheets but don't know how, here are the steps for homemade pasta.

  1. Sift the flour and a pinch of salt into a bowl, and make a well in the centre, then add eggs
  2. Gradually mix flour into eggs and knead for 10 minutes. You can use your hands to mix. Cover and stand for 20 mins.
  3. Sprinkle dough with semolina (this is like flour but doesn't dry it out, you can also use flour if you don't have semolina) and pass it through the pasta machine on thickest setting. Fold in half and pass through again reducing the thickness until you have around a ½ cm thickness. You have made your own lasagna sheets which can also be made into different types of pasta.
