If you're anything like me, you have more to do in a day than there is time for. If you're even more like me, you enjoy eating home cooked food and shy away from anything micro waved or in a box. Eating a complete, prepared meal doesn't just taste better, it feels better too. It comes with a strong sense of satisfaction. Me, I'm a pasta and tomato freak. Diced tomatoes on some form of noodle are the staple of my diet. But I also like to save time. Try my pasta sauce and poor it over some penne noodles. Once you find you like it, change it up a bit any way you like. It's easy and affordable.
Ingredients
- 1 can diced tomatoes with green chilies (I like petite cut)
- 1 group green onions or scallions
- 1 lb. ground turkey
- 1 lemon
- 1 tsp minced garlic or garlic clove
- ½ tsp crushed red pepper
- ¼ tsp granulated sugar
- ¼ tsp salt
- Fresh Cilantro lightly added to taste
Method
- Begin by boiling your noodles. I like penne and rigatoni noodles best for this recipe.
- Next, start browning the ground turkey with garlic in a frying pan. One thing I like to do when baking or browning meat is to sprinkle some ground nutmeg on top. It alters the flavor only slightly and smells wonderful while cooking.
- Once the meat is ready add the tomatoes, green onion, sugar, salt and red pepper. Grate the lemon rind on top of the sauce. You can squeeze some lemon juice into the sauce if you like, but the rind should add enough flavor. Dice a small amount of fresh cilantro on top then stir it up.
- Allow the sauce to simmer together for about five minutes then serve on top of noodles.
Total cook time - 10-15 minutes.
