Ingredients
- 1 cup of full-fat cream cheese (softened)
- 1 finely chopped garlic clove
- 1 ounce of mixed herbs (you can use thyme, basil, chives, and parsley - finely chopped)
- 1 quantity of fresh pasta dough, rolled by machine into 2 x 12-inch strips, or divided into 4 and rolled by hand as thinly as possible
- semolina (to coat)
- 1/2 cup butter
- salt
- ground black pepper
Method
- Mix the cream cheese, garlic, and most of the herbs together. Season this with salt and pepper.
- Make the ravioli, filling them with the cheese and herb mixture. Toss the ravioli in a little semolina to coat it lightly and let is rest at room temperature for about 15 minutes.
- Bring a large pan of salted water to a boil. Drop in the ravioli and cook it for 7-9 minutes or until they are just tender to the bit. Drain them well.
- Melt the butter. Toss the ravioli in the melted butter. Sprinkle this with the remaining herbs and serve it immediately. Enjoy!
