I have to admit, I absolutely love to cook, but what I love more is creating amazing foods, especially something so wonderful like macaroni and cheese. I remember making imitation macaroni and cheese for the first time at about age 10-11. Yes, I learned to cook at a young age. It was until I was about 17-18, that I decided I wanted to mess around with making homemade macaroni and cheese and develop something so great, that is was undeniably edible.
Is there anyone that does NOT love macaroni and cheese?! I can't think of anyone that I know that does NOT love it. It's definitely amazing, that's for sure.
Anyways, here is my recipe. I hope you like it.
Sarah's Macaroni and Cheese
- 2 cups of elbow macaroni
- ½ cup of melted butter
- 1 cup of cream cheese (softened)
- 1 cup of mozzarella cheese (shredded)
- 1 cup of mild cheddar cheese (shredded)
- 1 cup of sharp cheddar cheese (shredded)
- 1 cup of gouda cheese (shredded)
- 1 cup of muenster cheese (shredded)
- ½ cup of swiss cheese (shredded)
- ½ cup of yellow American cheese (shredded)
- ½ cup of montery jack cheese (shredded)
- 2 cups of whole milk
- 2 eggs
- 1 egg yolk
- 1 tsp of salt
- 1 tsp of pepper
- ¼ tsp of cayenne pepper powder
- ¼ tsp of garlic powder
- ¼ tsp of onion powder
- ¼ tsp of extra virgin olive oil
You want to begin by cooking the 2 cups of macaroni noodles in boiling water for only about 7 minutes (10 minutes at the most). Add about a pinch of salt to the boiling water, to give the noodles some natural flavor. Do NOT over cook, as the noodles will continue to cook in the oven, however; do NOT overcook or you'll end up eating dried noodles. You wanna then begin preheating the oven for about 325 degrees.
While noodles are cooking you want to mix the eggs, egg yolk, milk, cream cheese, melted butter, salt, pepper, cayenne pepper powder, garlic powder, onion powder, and extra virgin olive oil together in large mixing bowl. As you do this, you wanna drain the noodles and grease your pan, so it will be ready.
You then wanna add the drained noodles to the combined mixture of the eggs, egg yolk, milk, cream cheese, melted butter, salt pepper, cayenne pepper powder, garlic powder, onion powder, and extra virgin olive oil. As you do this, you wanna combine the mozzarella cheese, mild cheddar cheese, sharp cheddar cheese, Gouda cheese, muenster cheese, swiss cheese, yellow American cheese, and montery jack cheese. Add the majority of it (as in 97-98% of the cheese) to the noodles and premade mixture.
You then wanna add the result into the pan. You wanna take the following 3-2% of cheese leftover and sprinkle it over the noodles, eggs, spices, and cheese combination.
You then wanna bake the macaroni and cheese for about 30-35 minutes. After it is done, you wanna let it cool for about 5 minutes.
Remember, the ingredients vary upon your guests or how much you plan to eat. The recipe I made is for 8 servings.
