How to Make Fiesta Corn and Pasta Skillet

A festive dish that I hope you will all like.

Ingredients

  • 1 ¼ cup dried wagon wheel macaroni or medium shell pasta
  • 12 oz. ground beef
  • 1 tbsp chili powder
  • 1 can (15 ¼ oz) Delmonte fiesta corn, drained
  • 1 can (14 ½ oz) Delmonte diced tomatoes with basil, garlic, and oregano

Method of Preparation

  1. Cook pasta according to package directions - drain.
  2. Meanwhile, brown beef in large skillet drain.
  3. Stir in chili powder. Cook and stir for one minute.
  4. Stir corn, undrained tomatoes and cooked pasta. Heat through.
  5. Get creative: substitute beef with ground turkey or sausage or try another Del Monte vegetable such as gold and white corn or lima beans.

I am a vegetarian but it looks good without the meat, and I will use cream of mushroom soup instead of tomatoes. My diet is so weird I have to improvise.
