Tasty Western Style Simmer Chili

A Western Style simmer chili that has been a family favorite. We take the best of the west and put a simple "spin" on it. This chili is a tummy warmer as we head into Fall. It fills the house with wonderful aromas that get everybody ready to eat.

Tasty Western Style Simmer Chili

(With a REAL taste of the West) 

A Smokey Brandeher Recipe for the Crock Pot

Ingredients

  • 3 Cans Chili Spiced Red Kidney Beans
  • 3 Cans Refried Beans
  • 1 lb. Ground Beef
  • 1/2 Medium Onion (finely chopped)
  • 3T. Chili Powder
  • 1 16 oz. Jar of Salsa (Choose mild, medium or hot), or Mexican Style Stewed Tomatoes.
  • 1  6oz. Cup of Hot Coffee

Method

  1. Brown the 1 lb. Ground Beef, drain and set aside.
  2. Take 2 cans of the Chili Spiced Red Kidney Beans, drain and add to the Crock Pot.
  3. Take 2 cans of the Refried Beans and add to Crock Pot.
  4. Add the chopped 1/2 Medium Onion to the Crock Pot.
  5. Add one Jar of Salsa to the Crock Pot (or Mexican Style Stewed Tomatoes).
  6. Add 3T. of Chili Powder to the Crock Pot (add more later if you wish).
  7. Add 1lb. Cooked Ground Beef to the Crock Pot.
  8. Add 6oz. Cup of  Hot Coffee to the Crock Pot.

With a large wooden spoon mix and blend all the ingredients together.  Cover Crock Pot and simmer on HIGH for one hour.  Chili will simmer down, so at the end of the first hour  (if needed) add the extra can of the Chili Spiced Red Kidney Beans (drained) to the Crock Pot.

Cover and simmer on Low for another hour.  At the end of the second hour (if needed) add  the extra can of Refried Beans.  Simmer the chili the third hour on Low.   At the end of the third hour the Chili should be ready to serve.  Serve topped with shredded Cheddar Cheese,  more Salsa, or any way your family likes to top Mexican food, corn bread, or       Tortilla Chips.   ENJOY!
