Taco Tortilla-Wrap Lasagna

A quick and easy preparation to make a spicy Southwestern-style meal. Hamburger, salsa, cheese and tortilla wraps are the main ingredients.

Ingredients

  • One to 1 1/2 Pound Hamburger, browned & partially drained (if necessary)
  • One can “Bean Medley”, or Chick Peas, drained
  • One large can Crushed Tomatoes
  • One medium-red onion, diced
  • One Tablespoon Balsamic Vinegar
  • Tortilla Wraps (large)
  • Grated marble cheese
  • Parmesan Cheese
  • (Optional) Crushed Taco or Plain Nacho shells/chips
  • Salt, spices

Method

  1. Brown hamburger thoroughly in a deep pot. Drain excess fat, if present.
  2. Add contents of large can of Crushed tomatoes, coarsely chopped red onion.
  3. Add salt, spices (chili powder, cayenne pepper, -etc. to taste), and a tablespoon of Balsamic Vinegar.
  4. Add can of Bean Medley or Chick Peas to pot, stir over low heat to partially soften the onion chips, and blend well. You want a fairly large amount of diced red onion in this. You are making a homemade Salsa.

    Optional: You can use a large jar of no-name salsa in lieu if this homemade version.
  5. No need to bring to excessive heat. Just blend in well over medium heat. Turn off burner when mixture is warm and begins to bubble.
  6. In a large deep glass casserole dish, place one Whole Grain Tortilla Wrap flat, sprinkle with grated marbled brick cheese and Parmesan/Romano cheeses. Optional: coarsely crushed Taco/plain Nacho chips.
  7. Layer warm hamburger/tomato-salsa mixture one-half inch deep. Repeat process until the casserole dish is filled, typically 4 or 5 layers.
  8. Top with extra grated marble cheese and Parmesan/Romano, and breadcrumbs if crunchy crust is desired.
  9. Bake in oven at 350-degrees F until lightly bubbling and brown on top (about 20 minutes). Mostly, this process is to heat up the dish as the hamburger is already cooked. The Tortilla wraps will absorb much moisture and swell up a bit, making a firm sliceable consistency.
  10. The onions should be cooked, but still slightly crunchy.
  11. Serve hot, with large glass of ice cold Cola which compliments the flavor nicely.

This quick recipe is easy to make, fun, and is a great way to use-up those partial jars of Salsa and leftover Taco shells/Nacho chips. This serves-up much like lasagna is savory and satisfying. There is much room for variation in this recipe and this has to be just about the best tasting thing on the planet!
