Ingredients
- 4 good sized boneless pork chops
Rice stuffing
- 2 tablespoons olive oil
- 1/2 a small onion chopped
- 1 1/2 cups rice
- 2 cups chicken broth
- 1 cup salsa (I use mild but use what you like)
- 2 strips bacon
- 4 small strips of a sweet red pepper diced
Preparation
Cook bacon in pan until done. Leave about 2 tbs bacon grease in pan. Add olive oil and onions and saute for about 5 min. Add rice and cook until rice begins to brown. Add the other ingredients and bacon and cook until all the liquid is absorbed about 20 min.
Rub
Ingredients
- 2 tsp salt
- 1 tbs paprika
- 1 1/2 tsp pepper
- 2 tbs cumin
- 1 tbs chili powder
- 1 tbs onion powder
- 1 tsp garlic powder
Preparation
Mix all ingredients together and get your pork chops out. Rub over your pork chops on both sides. Place your pork chops in a pan and cook on each side for 2 min. Remove from pan. Get a knife and slice in the middle of the pork chop to form a nice sized pocket. Stuff with stuffing mixture and then place a tooth pick to hold it shut. The toothpicks help keep the rice in place while cooking. Do this with all the pork chops and then place in a baking dish. Cover with any remaining rice mixture. Cover. Heat oven to 350 degrees and cook for one hour.
This recipe takes a while tp prepare but trust me it will be well worth the time that you put into it. It will feed at least four very hungary adults if not more. There is also not much need to have to many sides with this one. To me it is spicy without being to spicy but if you like hotter you can always sub some of the ingredients with ones that are a little more spicy.
