A pork loin can be used here or see if your grocer has already cubed pork. Meat should be lean.
Ingredients:
- 2 pounds 1 inch cut cubes of pork 2 cloves garlic
- 2 ½ cups water 1/3 cup cornstarch
- 1 ½ teaspoon salt 1/3 cup cider vinegar
- 1/3 cup soy sauce ½ cup pineapple juice
- 1 cup pineapple chunks 3 tablespoons sherry or merlot
Method:
- In saucepan add the pork, garlic, water, salt, and soy sauce.
- Heat to boiling.
- Cook on low heat for 1 hour or until meat is tender.
- Drain the broth.
- In saucepan mix corn starch, vinegar, pineapple juice until lump free.
- Slowly blend in meat broth and cook until thick and clear.
- In serving bowl or platter layer meat cubes and top with pineapple chunks.
- Sprinkle sherry or merlot on top of layers.
- Pour sauce on top and mix or serve as is.
