Spicy Pork Cubes

Elegant meat dish for a buffet of just plain good eating.

A pork loin can be used here or see if your grocer has already cubed pork. Meat should be lean.

Ingredients:

  • 2 pounds 1 inch cut cubes of pork 2 cloves garlic
  • 2 ½ cups water 1/3 cup cornstarch
  • 1 ½ teaspoon salt 1/3 cup cider vinegar
  • 1/3 cup soy sauce ½ cup pineapple juice
  • 1 cup pineapple chunks 3 tablespoons sherry or merlot

Method:

  1. In saucepan add the pork, garlic, water, salt, and soy sauce.
  2. Heat to boiling.
  3. Cook on low heat for 1 hour or until meat is tender.
  4. Drain the broth.
  5. In saucepan mix corn starch, vinegar, pineapple juice until lump free.
  6. Slowly blend in meat broth and cook until thick and clear.
  7. In serving bowl or platter layer meat cubes and top with pineapple chunks.
  8. Sprinkle sherry or merlot on top of layers.
  9. Pour sauce on top and mix or serve as is.
