3 to 6 hours before you are ready to grill you will need to marinade the chicken in a freezer bag. Just add the chicken to the freezer bag and pour the salad dressing in. Shake it up well.
Put into the refrigerator for 3 to 6 hours.
I know I'm a busy Mommy so I always buy the pre-packaged salads. They are great and you can get them in all kinds of varieties.
Choose what you like best.
Ok, the grill is ready and the chicken is marinated!
Method
- Cook the Italian chicken for about 45 minutes, until you see no pink!
- Set aside to cool for 10 minutes.
- Now, while the chicken is cooling, dice the tomatoes and the cucumbers. I always dice the cucumber with the peel on but it's your choice.
- Add to a medium bowl; pour Italian dressing over the veggies and mix. There will be more dressing than you need, that's ok you'll use it later. Put into the fridge until chilled.
- Now, cube the grilled chicken; add to a large bowl. Get the cooled veggies that are soaking in the dressing and add them to the large bowl of chicken cubes. Mix well.
- Chill for 10 minutes.
- Get salads ready with cheese, baco's and croutons.
- Spoon chicken and veggies mix onto salads and enjoy!
No other dressing is needed.
This is one of my favorite meals.
Southern Style Sub Sandwiches under $20.00
Serve on paper plates for a mess free meal.
Ingredients
- 1 pound of sliced turkey
- 1 pound of sliced ham
- 1 package of bologna
- 8 to 16 slices of American cheese
- Lettuce leaves or shredded prepackaged
- 2 tomatoes sliced
- Mayo
- Hamburger dill pickle chips
- Mustard
- Hoagie or sub buns
- Potato Chips
- Baked Beans
Method
- Prepare subs with turkey, ham and bologna slices.
- Add two slices of cheese
- Teaspoon of mayo-spread on both pieces of bread
- Add lettuce leaves
- Two tomatoes slices
- 4 pickle slices
- Stripe of mustard
- Slice and serve with potato chips and baked beans.
Meaty and cheesy Burritos under $15.00
Ingredients
- 2 Pounds of ground Turkey or beef
- 2 packs of taco season
- Refried beans
- 1 can of diced tomatoes and chilies
- 2 cans of nacho cheese sauce
- Taco Rice
- 10 Large Burrito shells
- Shredded taco cheese
Method
- Brown the ground meat;
- Drain.
- Add both season packs and water according to package, simmer for 5 minutes.
- Spoon refried beans onto large shells and spread evenly.
- Spoon nacho cheese onto shell and spread evenly.
- Spoon taco meat onto shell and spread evenly.
- Add a teaspoon of diced tomatoes and chilies,
- Spoon on rice,
- Sprinkle with shredded taco cheese
- Roll burritos and place them onto a cookie sheet.
- Broil until toasted on both sides.
- Cool for 5 minutes.
- Enjoy the gooey-cheesy goodness.
Mozzarella chicken and angel hair pasta under $15.00
Ingredients
- 4 to 6 Chicken Breasts
- 1 box of angel hair noodles
- 1 can of Del Monte Traditional spaghetti sauce
- Shredded mozzarella cheese
Method
- Sprinkle garlic salt onto chicken breasts.
- Cook chicken breast at 400 degrees for 50-60 minutes or you can cook them on the grill, it taste great either way!
- Arrange cooked chicken on a cookie sheet and sprinkle with mozzarella, leave to melt until pasta is ready.
- Bring 4 quarts of water to a boil; add a splash of oil to water to keep noodles from sticking together. Add angel hair pasta; cook as directed on box. Drain and pour into a large mixing bowl.
- Heat spaghetti sauce on stovetop and add to angel hair pasta and mix together well.
- Spoon noodles onto plates and add a piece of the cheesy chicken on top!
Dinner is served.
Bonus: Fast and easy Garlic Bread
Believe it or not, Hot dog or Hamburger buns make the best garlic bread!
Open the buns, butter the inside well, sprinkle with garlic powder or garlic salt.
(I've also used garlic butter spread but it tends to be a little pricier)
Bake in the oven at 400 degrees for 5 minutes then broil until toasted perfection! Enjoy!
