My Auntie Marry-Ann used to make this recipe for us kids when we would go and spend the weekend with her and my other two cousins. She used to make fun meals that sometimes looked a little strange, but always delivered on flavor and a ton of love and laughter.
My Auntie passed away in '92 from cancer, she was only 42. This is my way of passing on a great recipe from a great woman. I miss you Auntie Mary-Ann!
Ingredients:
- 1 lb lean ground chuck

1 lb bacon sliced vertically and fried, save drippings in pan
(note: Slicing bacon can be done easily if bacon is frozen)

1/2 cup bread crumbs

1 pkg taco seasoning mix

1 medium yellow onion chopped

1 jumbo egg

1 can bean with bacon soup

2-3 roma tomatoes, chopped
-
1-2 cups shredded sharp cheddar cheese

3/4 cup sliced black olives

4 crusty hard rolls
Method:

Fry bacon in frying pan. Stir frequently until bacon is crispy. Drain bacon on paper towel lined plate. Remove half of the drippings and leave remainder in pan.

Put hamburger, egg, bread crumbs, onion, and taco seasoning into large mixing bowl. Mix well and make well formed patties. You should have about four-six patties.

Place patties into pan and fry with remaining bacon drippings on medium heat. When sides are nice and brown, lower heat and cover for ten minutes.

Take bean with bacon soup and mix contents with 3/4 can of water into a bowl and blend until soup is reconstituted. Pour over burgers and cover for another 10 minutes or until mixture starts to bubble.

Add black olives, crumbled bacon, and cheese. Turn off heat and let stand for 5-10 minutes.

Serve on bun with fresh, uncooked tomatoes on top.

Add sour cream if desired.
