How to Cook Inalsamman Nga Kazzing

The Philippines is a country of unique culture. Specifically, one of its smaller group of inhabitants – the Ybanags – has one of the most unique lifestyle particularly on foods. The Ybanags have a unique delicacy named Inalsamman nga kazzing or sour stew of goat is a mouth watering dish or made into pulutan intended for the boys.

The Ybanags have a unique delicacy named Inalsamman nga kazzing or sour stew of goat is a mouth watering dish or made into pulutan intended for the boys. The eating is paired with Shioktong (wine). When guys feel like eating meat of kazzing (goat), they simply ask from their neighbor who has kazzing. The owner generously gives/shares his kazzing in the condition that he joins the boys' agayanâ or merrymaking.

Inalsamman nga kazzing is made out of the cleaned head and feet of the goat. Its ingredients are, of course, the frequently used seasonings like onions, garlic, black pepper added with boiled and crushed calamagui (tamarind fruit). These salamagui or tamarind fruitsgive the menu a special and unfathomable perfume.

The process of cooking includes boiling of water first. Then, the cleaned and chopped feet and head of the kazzing are submerged in the boiling water. This is then seasoned with two bulbs of sliced onions, four cloves of crushed garlic, two pieces of crushed ginger. Finally, young leaves or crushed fruit of calamagui (tamarind), and one teaspoon of salt are added and seasoned. This is served hot for an enjoyable and laughter-full pulutan (merrymaking).
