Method
- Preheat oven to 350.
- Place Brie on cookie sheet, and pour Thai sauce over the entire top of cheese.
- Allow it to run and pool on bottom.
- Bake until cheese is soft inside and sauce is bubbling.
- Let cool for a few minutes.
- Pour on more sauce if needed.
- Cut wedges of fresh French bread and serve with cheese.

Artichoke Dip
Ingredients
- 1/2 cup Miracle Whip
- 1/2 cup sour cream
- 1 can drained and chopped artichoke hearts
- 1/3 cup grated Asiago cheese
- Dash Tabasco sauce
- 1 tbsp minced garlic
- Dash of dill
Method
- Combine ingredients into a round baking dish.
- Bake at 350 until bubbly.
- Serve with pita wedges.
Swedish Meatballs
Ingredients
- 1 lb lean ground beef
- 6 crumbled crackers
- 1/4 cup parmesan cheese
- 2 tsp oregano
- 1 tsp garlic powder
- 1 tsp horseradish
Method
Mix together and make into balls and brown.
Sauce
Ingredients
- 1 cup ketchup
- 2 tbsp Worcestershire sauce
- 4 tbsp brown sugar
- 1 tbsp vinegar
- 2 tbsp horseradish
- 4 chopped green onions
- 1/4 tsp chili powder
- 1/4 tsp cayenne
- 1/4 tsp paprika
Method
- Mix together and pour over meatballs.
- Bake at 375 for 45 minutes.
Garlic Bread
Ingredients
- fresh baguette
- 3 tbsp of butter
- 4 cloves of chopped garlic
- Parmesan cheese
Method
- Slice baguette into 1/2 slices.
- Slice bread on an angle.
- Mix butter and garlic and spread over slices.
- Sprinkle with parmesan cheese.
- Place on cookie sheet and bake at 350 until butter bubbles and garlic is heated.
Cold Seafood Pasta Salad
Ingredients
- Whole wheat penne pasta
- 1 cup fresh chopped mushrooms
- 1/2 cup diced cherry tomatoes
- 3 chopped green onions
- 1 pckg chopped crab meat
- 1/2 bottle low fat Ranch dressing
- 1/2 bottle low fat Italian dressing
- 1 tsp dill
- Dash of salt and pepper
Method
- Mix dressings, dill, and salt and pepper well.
- Add mushrooms, tomatoes, onions, and crab.
- Mix with cooked pasta. Serve cold.
Dessert: Chocolate Muffins
Ingredients
- 2 eggs
- 1 cup sugar
- 6 tbsp cocoa powder
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla
- 2/3 cup milk
- 2/3 cup butter (or oil)
- 1/2 cup white chocolate chips
- 1/2 cup butterscotch chips
Method
- Preheat oven to 350.
- Beat eggs, sugar, flour, cocoa powder, baking powder, vanilla, and milk.
- Stir in chips, and melted butter.
- Bake 30 minutes.
