Ingredients
- 1 – 2 Flank steaks depending upon how many people you are serving.
- (Note: Be sure to ask the butcher tenderize the steak for you.)
- Bag of baby spinach (found in the produce section)
- Fresh sliced provolone cheese
- Salt, pepper and other seasoning to taste.
Directions
- Lay the flank steaks flat and cut in half.
- On each half, place a slice or 2 of provolone and a good amount of washed and patted dry baby
spinach leaves.
- Roll the meat as tightly as you can like a jellyroll with the ingredients inside. Brush olive oil on top of
each roll and sprinkle with salt, pepper, and/or other seasoning you enjoy.
- Place rolled meat with the seam side down in a baking dish and bake in preheated 350 degree oven for
40 – 45 minutes. (If you wish, you can tie the rolls with cooking string before baking.)
- Add water to the bottom of pan to make gravy.
- Let meat rest for 5 minutes before slicing.
Serve with your favorite vegetable, rice, or mashed potatoes.
